A livestock farm born of passion and a love for the countryside
Tierras de Carrizal originated in Alcolea de Tajo (Toledo) on a small family estate located in the area traditionally known as Los Carrizales—a setting defined by the countryside, water, pastures, and a lifestyle deeply rooted in the land.
What is now a livestock operation with a distinct identity began simply, almost as a personal dream. While I was studying veterinary medicine—and with my parents owning that estate—I became inspired to breathe new life into the property and use it to establish a small livestock business of my own.
At first, it was a project driven by passion—a venture born of respect for animals and a desire to produce high-quality meat that could also be sold in our own butcher shops in Puente del Arzobispo and El Gordo. The vision was clear from the start: to raise our own animals, know their origins, control their diet, and offer customers meat that was honest, carefully produced, and truly distinctive.
As with any serious livestock venture, the initial steps were not easy. Before the animals could arrive, we had to get all the paperwork in order, secure permits, register the fattening facilities, and prepare the farm for organized, responsible operations. We understood from the very beginning that a high-quality livestock business cannot be improvised; it requires persistence, investment, expertise, and daily attention.
From the first animals to a livestock operation with an identity
The project began with an initial herd of around 60 crossbred cows. That starting point laid the foundation for ongoing work in selection and genetic improvement.
In the initial stage, Limousin genetics were introduced to produce animals with good conformation, hardiness, and high meat yield. Over time, our objective evolved: the goal was no longer merely meat production, but rather achieving meat that was finer, more tender, and juicier—offering a superior gastronomic experience.
Consequently, we began introducing the Angus breed, renowned for its ability to provide intramuscular fat—or marbling—as well as tenderness and exceptional sensory qualities. Today, approximately 50% of our cattle herd consists of purebred Angus, reflecting our clear commitment to quality, differentiation, and continuous improvement.
Our sheep farming operation also had humble beginnings, starting with just 15 ewes. It grew gradually, incorporating animals from farms that were closing or from herders who were retiring, while always selecting specimens with the best genetic traits and the greatest adaptability to the local environment.
Currently, our sheep flocks are dominated by traditional breeds such as Talaverana and Merino. These are hardy, docile animals deeply rooted in the region; they make excellent use of natural resources and embody the essence of traditional livestock farming managed with a modern vision.
Management, selection, and continuous improvement
At Tierras de Carrizal, we operate with a clear vision: we do not seek growth at any cost; instead, we aim to improve the quality of our livestock and our meat year after year.
That is why we place great importance on genetic selection. We reserve the highest-quality females for herd replacement, aiming to preserve the best bloodlines, strengthen the animals' adaptation to the farm, and progress—generation after generation—toward a more balanced, efficient herd focused on meat quality.
One of the distinctive management practices at our farm is the early castration of male animals. While this practice entails higher production costs and requires more careful handling, it allows us to produce meat that is finer-grained, tender, and juicy. Furthermore, it gives us the flexibility to raise animals for longer production cycles—such as steers—or to slaughter them at a younger age, always with the goal of achieving high-quality meat with an excellent texture.
It is neither the fastest nor the most economical path, but it is the one that best reflects our philosophy: doing things with patience, sound judgment, and respect for the final product.
Self-supplied and controlled power supply
Nutrition is a cornerstone of our livestock farming. We know that meat quality begins long before slaughter: it starts in the pasture, at the feed trough, with the water supply, and through the animal's rest and calm daily handling.
That is why we produce some of our own forage on the farm, allowing us greater control over nutrition and enabling the responsible use of our land's resources. Furthermore, we carefully select the suppliers and raw materials used in our compound feeds, always prioritizing consistency, food safety, and nutritional quality.
Our goal is not to artificially accelerate the animals' growth, but rather to raise them in a balanced, healthy, and controlled manner. Proper nutrition, combined with correct handling, is key to producing meat with distinctive flavor, texture, and character.
Animal welfare as a way of working
For Tierras de Carrizal, animal welfare is not merely an obligation but a fundamental approach to livestock farming.
An animal that is well-cared-for, well-fed, and handled calmly reaches its full potential and yields higher-quality meat. That is why we attend to basic yet essential factors: adequate space, clean water, a balanced diet, health monitoring, veterinary oversight, and respectful handling that avoids unnecessary stress.
Our veterinary background provides a particularly valuable perspective in this regard. It enables us to better observe the animals, anticipate potential issues, prevent disease, and apply technical standards to our daily operations.
We believe that quality is not achieved at a single specific moment, but rather through the decisions made every day: how the animals are fed, how they move, how they are handled and examined, and how their natural rhythms are respected.

Well-managed livestock farming helps keep the land active, preserves pastures, utilizes natural resources, and prevents the abandonment of properties that might otherwise deteriorate over time. It also fosters economic activity, sustains traditional trades, and helps maintain rural populations.
Our commitment to the environment is reflected in our daily decisions: producing some of our own forage, utilizing on-site resources, caring for the soil, minimizing waste, maintaining the estate in good condition, and working with a long-term vision.
We view sustainability not as a buzzword, but as a responsibility. We aim to produce quality meat while maintaining respect for the environment that makes our livestock farming possible.

From the very beginning, the project was founded on the idea of raising our own animals and offering customers meat with an origin we have known since day one. This ensures transparency, safety, and trust.
Today, consumers increasingly value knowing the source of what they buy: how the animal was raised, what it was fed, how it was handled, and the story behind the product. At Tierras de Carrizal, we can tell that story truthfully, because we are not talking about a brand created in an office, but about a genuine, family-run farm built through daily hard work.
